Late Night Sandwich Fix
Jerk Chicken Breast & Cheddar Sandwich
Do you ever skip dinner, have a snack, feel full and then the time runs away and it's suddenly 10pm and you're starving?? NO? Just me? Oh, you too, right? Yes, exactly! I hate it when that happens. I mean it's not my fault why I was too lazy to have actual food for dinner.
Late night sandwiches are my go to meal once I get hungry at ungodly hours. I will worry about the consequences of the carbs and fat later on. My focus in those moments is set on having a delicious sandwich to sate my late-night snack craving.
We've all been here, so let's look make an easy, balanced late night snack with bread and deli meat. I am sure you will love it as much as I did.

Serves: 1
Prep Time: 15 mins
Ingredients:
3 slices of Hamilton Smokehouse jerked chicken breast slices
3 slices of tomatoes
2 pieces of lettuce
2 cheddar cheese slices
1 tsp mustard
1/2 relish
2 tsp of butter
Let's Make a Sammich
- On a griddle or contact grill with setting turned to medium heat, spray cooking spray and let it heat up for about 1 minute.
- Add jerk chicken slices and turn occasionally until they start browning up.
- Add a little butter on one side of the bread and place them on the contact grill for about 2-3 minutes on each side.
- Add cheddar cheese to the slices of bread and let that melt down for about 1 minute.
- Top with jerk chicken slices then add mustard on one side of the deli meat, and sweet relish on the other side.
- Add lettuce and tomatoes and put the slices together.
Danzii's Tips:
- You don't necessarily have to use jerk chicken breast slices, I just like how flavorful it is. In reality, any type of deli meat can work.
- You can do this on the stove top, just use medium heat and use a toaster to crisp up your bread.
- You can substitute condiments, and add a little mayo if you like. But as a last ditch effort to preserve my physique, I left it out. 😁

I won't ever be the person to tell you not to have late night snacks, it would be a pot/kettle situation. We don't do that around here. This for my late night owl snackers. It's pretty tasty and more importantly, it sates the hungry right NOW and that's all that is important. This can be a good midday snack for my non-late night snackers. Switch out meats and condiments and have fun with it. Until we cook again, "Bone Apple Teeth!"
